day 5

Yummy breakfast! OK so I have decided I like to cook much more in the morning. Perhaps it is because I like bread so much and that is mostly what I have been making. Well this morning I make blueberry muffins, and the were SO easy. All I had to do is mix flour, sugar salt and baking powder with a beaten egg, oil, milk and fresh blueberries. I didn't even have to knead anything! They are baking right now and my tummy is excited! I'll post tonight to let you know the verdict, but now I must get ready for work.

day 4-Country Scones and Baked Ziti

yumminess continues today with scones. I was super happy with how easy they were to make and they were delish. I also made a Caesar salad and baked ziti. Both were good, but I should have started them earlier in the night, i was pooped by the time I finished.

day 3-latte, crepes, and mushrooms!

OK so today started with simplicity. I made foam to go in my coffee aka a latte. Pretty good, but kinda hard to get the milk into a cup, I'm sure there was something there that I wasn't doing right. I also had for breakfast crepes. Very yummy, but they get cool very fast, I think next time I will make them with cinnamon and brown sugar. Dinner was the best. I finished with stuffed mushrooms! I took the extra stuffing from the chicken last night, added it to sauteed mushroom caps and added soy sauce...yum. Too bad I had to eat them all myself (yeah right).

Day 1-2

Day one started out great with poached eggs. I thought it would be a little more difficult, but sure enough drop the eggs into water gently and there you have poached eggs...tasted like fried eggs without the grease. For dinner my parents came over and we had pepper crusted pork tenderloin, a cherry brie salad, and rosemary french beans. The salad was the best thing I have ever put in my mouth. It had sauteed almonds with sugar, romaine, brie in it. The dressing was my favorite with lots of sugar and apple cider vinegar(YUM). The pork loin was super tender and pretty easy to make. By mixing Dijon mustard several spices and adding breadcrumbs it makes a fun crust. The french beans were cooked in butter...what more do I need to say?

Day two was a little more adventurous. The day started with my first ever omelet. It tasted Divine, but stuck to the pan and was defiantly not pretty. It also was not as cooked as I would have liked, but still tasty. Around lunch time I realized the kiwi ice I waned to make had to freeze most of the day, so I started it early. You blend kiwi and apple juice then add splenda and orange zest. It was fruity and cold, this would be a great summer treat. I then started on the hash brown casserole...Oh Man are they to die for. Yes it has enough calories for your whole day, but man is it worth it. Mix a bag of hash browns, lb of Velveeta, half stick of butter, 16oz sour cream, and cream of chicken soup, then top with butter and cornflakes. It was SO good. Then I had the funniest experience with the chicken. I got chicken breast halves instead on bone in tenders. They were good, but huge! My husband felt like he needed a meat flask to go with his chicken! So I mixed spinach, ricotta, Swiss, and garlic for the stuffing. then I added paprika, thyme, and basil to coat the top. pretty good, but huge. For desert we had sticky buns topped with caramel and pecans. They rocked, but you need half a day to make them. you need to make your dough, let it rise, add cinnamon, butter, and sugar to top and roll up like a jelly roll. Then add pecans, whipping cream, and brown sugar to make crust. let that sit for another hour before baking. mmmmmmm. delish! Today was yummy, but hard work!

Yummy Starts

So the day after Christmas as I am sitting in my home thinking about how I would love to cook as well as my grandma I felt very inspired. I decided to pull out all of my cookbooks and start cooking. I wanted to try as many recipes as possible and in the process begin to actually become a cook. For anyone reading, yes, I have seen Julie and Julia and realize that this is nothing new. But it is new to me.
