Home made chicken Soup

Well I kinda decided to wing it on this one. I put two chicken breasts in a crock pot, added one carton of chicken broth, 2 tablespoons sea salt, 3 teaspoons rosemary, 3 teaspoons, thyme, 1 large carrot chopped, 1/2 stalk of celery chopped and half a bag of egg noodles. I let them cook so 8 hours on low. It was yummy, but imagine my surprise when I came home to find no noodles in the soup. They had melted and turned into a chicken pot pie kinda dish! It was good even without the noodles!

Corn bread muffins and crock pot chicken

This was delish! I took two partially thawed chicken breasts, half a cup of water and one packet of enchilada seasoning and put them in a crock pot on low for 6 hours. Best, most tender chicken I have ever had. I wrapped them in tortillas, Added enchilada sauce and cheese baked at 400 for 25 min. Man was it good. I also made corn bread muffins. I added corn meal, flour, eggs, milk, salt, sugar, and butter. They were not my grandma's, but they were good!

on Vaca

Hopefully you have not been sad about my lack of posts lately. I have been cooking, but I have been taking it easy on posting. I made a chocolate cake from scratch with a chocolate butter cream icing while in St. Louis visiting my parents, and a yummy chili last night to ward off the cold. Tomorrow I am going to try Chicken made in the crock pot.MMMM.

Day 20 Blondies and Sausage Stew













Well I have never made a stew before, or Blondie's so decided to give them a try. The stew was super easy. Add 1 can bean and bacon soup, 1/2 can diced tomatoes, 1 cup water, 1/2 cup chopped celery, 1/2 cup chopped carrots, 1 peeled and cubed potato, 1/2 tsp chili powder and 6 oz fully cooked sausage. Stir together and simmer 30 min. Very Good!
For the Blondie's I mixed 1 cup brown sugar with 1/3 cup butter over med head until smooth. Add one egg, 1/2 tsp vanilla, 1 cup all purpose flour, 1 tsp baking powder, 1/8 tsp baking soda. Put in an 8x8 greased baking dish. Sprinkle with white choc chips. Cook 25-30 min. Also a YUM!

Day 18-19- baby enchillata stuffed shells, baby back ribs, and german chocolate cake


So yesterday we had jumbo shells stuffed with enchilada stuffing. Very yummy, but there was enough filling for twice the shells. You take 15 jumbo shells and boil them, stuff them with refried beans, and top them with turkey meat cooked in enchilada sauce. bake with cheese. Tonight I cooked baby back ribs with potatoes and baked beans. The ribs were once again too much for two people, but I couldn't find any smaller. You take a rack of ribs and cut into smaller sizes, bake for 60 min at 350...then coat in barbecue sauce for another 30 min. Finally I make a German chocolate cake that came out great! Start with 2 sticks of softened butter and add 2 cups of sugar. Cream together until light and fluffy. Add 4 egg yolks(save whites) one at a time and mix between adding. Combine 2.5 cups flour with 1 tsp baking soda, and half tsp salt. Add to mixture one cup at a time. Add 1 cup buttermilk. Add 1 tsp vanilla. Beat egg whites on high seating until it forms hard peaks. Fold into mixture. Put in 3 greased 9in round cake pans. Bake for 30 min. Meanwhile, take 1 stick butter, 1 cup evaporated milk, 1 cup sugar and 3 egg yolks and combine over med heat in a skillet. Cook until golden brown. remove from heat. Add 4 oz pecans,2 oz walnuts and 1tsp vanilla. Let sit until it thickens. Finally heat 1 oz semi-sweet chocolate with half tsp shortening until blended. pour over sides.YUM!

Day 18- black and bleu salad...minus the bleu

Yesterday I made Black and bleu salad...minus the bleu. This was about the easiest thing I have made yet. A little strip steak with romain lettuce, tomatoes, cucumbers, cheese, and croutons. Quite tasty! Tonight...mexican stuffed shells!

Day 17...Roasted Duck!


Well today I decided to challenge myself with roasted duck with a cherry sauce and wild rice. I took the duck and let it thaw in cold water for two hours. Then I removed the liver, gizzards, and neck(so sad). Then I tied the legs together and put it in a dish, breast side up. Then I cooked it at 350 degrees for 2 hours. Then I steamed some wild rice for a side dish. For the sauce I took a jar of cherry preserves, two tablespoons of red wine vinegar and let them simmer for 10 min. I was super happy with the presentation and the taste. I feel it was a little too much work for every day, but it would be great for a special occasion.

day 16- cheesy noodle bake and peanut butter cupcakes


Well I had a delicious cheesy noodle bake and peanut butter cupcakes today! The cheesy bake only took 25 min to bake. I think a little cheese on top would make it spectacular. I loved, loved, loved the peanut butter cupcakes. YUM!

Day 14 Continued-pork chops

So I decided on pork chops with cauliflower...not the best...not the worst. I think that I overcooked the chops, they were a little tough. I also Had issues with the cauliflower, it was rubbery. I will not be making these again. On the upside I made a white chocolate mousse that was yummy. You would think it was hard, but it only took like 10 minutes to make. That one is a keeper!

Day 14

Ok so I'm thinking tonight might be a beef stew kinda night...with potatoes.mmmm. I guess this means i will have freeze my tail off going to the store. It will be worth it.

day 13-bisquits!

Well I did it...what people in the south think is the most important food to learn to cook(besides fried chicken)...biscuits!!!!! Yes I made them and they were good. I am so very proud that they didn't burn or turn out gross, and on my very first try!!!!!

Day 12-banana cake and fish tacos

So yesterday I made the banana cake and I was so sad when the center did not get done. It was soooo yummy, but there was no center. I guess if I had served it I could have put flowers in it! So I tried again today, but did a yellow cake instead. It worked beautifully with the butter cream frosting. I also had my first fish tacos. They were good and took no time to make. I have been surprised with how quick fish is to cook. They definitely didn't have the "Mexican spice" regular tacos had, but I will eat them again.

Day 11

Yummy in the ovey! I'm making a banana cake and butter cream frosting. I am a little worried, the cake does not look brown at all and it's supposed to be done. I guess I will poke it to see if it's done. Also I made breakfast for din din. Sausage, scrambled eggs and pancakes. Yummy!

Day 10

Well today was a little stressful at work, but I managed to bite the bullet and get my fish dish made. I had tilapia, and Scott liked it! I also had french beans and a cucumber relish with it. Total cook time=7 min from start to finish!mmmmm!

day 8 and 9

Day 8 had lemon pepper chicken bake , creamy french dressing and a mixed fruit cobbler. I loved they yumminess of the cobbler the best, with a little ice cream!MMMMM. The chicken was good, but a little too done for me. I guess next time I can cut the cook time down a little.
Day 9 started with yummy french toast. My hubby's favorite. He gobbled it up in two bites! I am making brochette chicken as we speak with angel hair pasta. It looks pretty yummy, but that's the point, right?

day 6 and 7

Day six had cookies and enchiladas! I made peanut butter cookies to take to Granny's house on New years day. I could eat the dough by itself. I was supposed to make filling so they would be sandwich cookies, but I ran out of time. I also made some yummy enchiladas stuffed with all kinds of tomatoes and onion and of coarse...beef! mmmmm, they were even good the next day!
